Liquid gold. Really. This single variety Ice Cider is made using the Northern Spy apple - a famous NY early 1800s variety prized for baking. It’s zingy acidity and apple pie spice flavors make it one of the few single-variety ice ciders that stand up to barrel-aging. In this case, we use top of the line French oak chardonnay barrels which bring just a hint of vanilla and toffee to round out this spectacular ice cider.

METHOD: Naturally cold-concentrated before fermentation in our Vermont winter weather. Arrested fermentation leaves residual sweetness.
