Production Notes:

  • Primary fermentation in stainless steel with wild yeast
  • Secondary fermentation in-bottle with 18-2007 Champagne yeast
  • 5 months in bottle before disgorging


  • Alcohol by volume 8.4%
  • Residual Sugar 1.6% (16 grams/liter)
